Make it: North Country Creamery cheese sauce

North Country Creamery will debut its new pepper jack cheese at this year’s Essex Country Cheese Tour, on Sunday, Oct. 13, 2019.

This year’s Essex County Cheese Tour is coming up on Sunday, Oct. 13. In honor of the occasion, Ashlee Kleinhammer and Steve Googin, owners of North Country Creamery in Keeseville, shared this recipe for a homemade mac and cheese featuring their farmstead cheeses.

Macaroni & Cheese Sauce:

Melt ~1/4c butter in a saucepan over medium heat; stir in ~1/4c flour, salt, and pepper until smooth, about 5 minutes. Slowly pour ~2c milk into butter-flour mixture while continuously stirring until mixture is smooth and bubbling, about 5 minutes. Add 1c shredded Havarti & 1c shredded Highland (or Pepper Jack if you’re feeling adventurous!) to milk mixture and stir until cheese is melted, 2 to 4 minutes. Pour over noodles (about an 8-oz box). For an extra cheesy, sharp bonus, add ~1/4c shredded Herdmaster or Couronne to the top and broil for 2 minutes!
